Egg Fried Rice (Chinese Style)

Ingredients

  • 400 g pre-cooked rice (cold)
  • 2 spring onions
  • 4 slices of ginger
  • 2 tbsp soy sauce
  • 2 eggs, beaten
  • Salt to taste

Instructions

  • Finely chop ginger and spring onions and place them in a dish for later use.
  • Heat 2 tablespoons of oil in your wok and add in the egg mixture. Stir until they are scrambled.
  • Add in ginger and spring onions and fry for a few seconds.
  • Add in rice and stir-fry for a minute.
  • Add salt to taste, soy sauce and stir-fry for about 5 minutes until the rice is fluffy.
  • Transfer it to a dish and serve.
