How to Make Fried Rice with Mushrooms and Pork Kebabs
- Curry Paste (Thai): 1
- Muscovado Sugar: 1
- Low-fat Yogurt: 250g
- Pork fillet (lean and cube into cubes): 400g
- Chestnut mushroom: 300g
- Sunflower oil: 1 Tbsp
- Chopped spring onion: 2
- Chopped ginger root:
- Basmati rice (cooked and chilled): 200g
- Shredded snap pea: 100g
- Sweetcorn: 175g
- Paprika: 1 pinch
- Lime Juice: 1 Lime
Take one bowl and mix sugar, yogurt (half) and Thai paste in this bowl.
Add mushrooms and pork in this blend and mix them well.
Thread these ingredients on eight skewers
Cook kebabs under your hot grill for almost 6 to 8 minutes and flip once. In the meantime, heat oil in your wok and add ginger and spring onions in this wok.
Fry them briefly and stir in paprika, sweetcorn, peas and rice.
Stir-fry for almost 3 minutes and serve hot rice with kebabs, lemon juice, and yogurt.
