How to Make Mediterranean Chicken Breast
In order to make the perfect Mediterranean chicken breast you need to marinate it for at least 10 minutes. Although it’s safe to marinate at room temperature, some people prefer to marinate for 30-45 minutes in the fridge.
When the chicken is placed in the oven make sure to bake it on the middle rack. The top rack should be set about 6 inches from the heat source. This makes sure that the chicken is cooked well and not burnt.
- 2 boneless, skinless chicken breast (8 ounce each)
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1/4 teaspoon dried thyme
- Freshly ground black pepper
- 1/4 cup freshly squeezed lemon juice
- salt to taste
- 1/2 teaspoon dried oregano
Season chicken breasts with salt and pepper and place in a bowl.
Add garlic, olive oil, lemon juice, thyme and, oregano in a small bowl and mix well.
Pour this marinade over chicken breasts and marinate for 10 minutes at room temperature.
Preheat oven to 400 degrees F (200 degrees C).
Place chicken breasts into a baking dish and pour the rest of the marinade on top.
Bake chicken on the middle rack of the oven until no longer pink in the center and the juices run clear. Usually it takes between 35 and 45 minutes based on the thickness.
Move baking dish to the top rack and bake chicken until well browned.
